| This is a wonderful recipe that is particularly great on
warm/hot days. It is very quick and easy to prepare. While there are a lot of
variations on this dish, this is my favorite version. My mom stole this from a
magazine many years ago... Ingredients  Bulgar wheat:  ½ cup Tomatoes: 3 large, finely chopped Italian parsley: 1 cup, finely chopped Onion: 1 cup, finely chopped. (NOTE: any of these
ingredients may be adjusted to taste) Lemon juice: 1/3 cup Salt: 2 tsp Olive oil: 1/3 cup Mint:  2 tblsp (fresh) or 1 tblsp (dried) InstructionsPlace the wheat in a bowl and cover it with water,
permitting it to soak/absorb the water over a period of about 10-20 minutes. Into a large bowl, add the tomatoes, italian parsley,
onion, lemon juice and salt. Carefully drain the excess water from the wheat, then add
this to the bowl and mix the ingredients. Refrigerate. Before serving, mix in the olive oil and the
mint. (I personally add the olive oil and mint prior to refrigeration.) May be served plain or stuffed into pita bread pockets.
